It's great that you are getting back into exercise Meredith. Regular exercise is probably the one single thing that you can do to improve your health!

Your question is a good one! It is not uncommon for people to say that their appetite is blunted after exercise (particularly after strenuous exercise). However, consuming a carbohydrate-rich meal after exercise is key to resynthesizing the glycogen that you used during your workout (so you will be ready to do it again the next day!). Research also suggests that having a small amount of protein (just 10 grams) can aid in recovery from exercise. Potatoes are a perfect post-exercise food not only because they are naturally rich in carbohydrate but they can be readily and easily topped with a bit of protein. Two of my personal favorites are a baked potato topped with low-fat cheese, broccoli and cauliflower, and a baked potato topped with black beans and salsa.

Hey Kathie--you're always a wealth of nutrition knowledge. Thanks for this posting!

Question about carbs and exercise....I just started working out again, but the only time I can fit it in is between work and going home to start dinner and homework with the kids. I'm finding that I'm not real hungry in the evening because of it. Are potatoes a good option if I'm only eating a small meal after exercising, or should I go with a protein source?
